| Ingredients | |||||
| 4 cooking apples, peeled and diced | 2 tbsp mustard seeds | ||||
| 1 kg courgettes, diced | 1 tbsp mixed spice | ||||
| 1 kg tomatoes, diced | 1 cinnamon stick | ||||
| 400g dark brown soft sugar | 500 ml apple cider vinegar | ||||
| 300g sultanas | 300 ml water | ||||
| 4 medium onions, chopped | |||||

| Dice the apples, courgettes and tomatoes finely - best done while watching TV, I find. Mix all ingredients together in a large pan, bring to the boil then simmer, stirring occasionally, until chutney is ready, This will take 2.5-3 hours depending on how juicy your apples, courgettes, onions and tomatoes are. The chutney is ready when the surface is glossy and the mixture parts when a spoon is drawn through. It can then be bottled in sterilised jars and will keep for up to a year. | |||||
