Courgette and Tomato Chutney Recipe
This is a great way to use up gluts of courgettes and tomatoes in late summer. It can be eaten as soon as it is ready or kept for up to a year.

Ingredients
 
4 cooking apples, peeled and diced 2 tbsp mustard seeds
1 kg courgettes, diced 1 tbsp mixed spice
1 kg tomatoes, diced 1 cinnamon stick
400g dark brown soft sugar 500 ml apple cider vinegar
300g sultanas 300 ml water
4 medium onions, chopped  
 
Method
 
Dice the apples, courgettes and tomatoes finely - best done while watching TV, I find.
Mix all ingredients together in a large pan, bring to the boil then simmer, stirring occasionally, until chutney is ready, This will take 2.5-3 hours depending on how juicy your apples, courgettes, onions and tomatoes are.
The chutney is ready when the surface is glossy and the mixture parts when a spoon is drawn through.
It can then be bottled in sterilised jars and will keep for up to a year.
